Easy to make lemon drizzle bundt cake!

This is such a quick and easy yet still delicious cake to bake! Perfect for spring time.

Here is everything you will need to bake the cake:

  • First thing you will of course need a bundt tin

  • 250g of butter (salted or unsalted)

  • 250g of plain flour

  • 225g caster sugar

  • 1 tea spoon of baking powder

  • half of a tea spoon of salt

  • zest of 3 lemons

  • 4 large eggs

For the syrup:

  • 100g caster sugar

  • Juice of 3 lemons

To start off you will need to preheat the oven so turn it on to 160• fan or gas mark 4. Generously cover the bundt tin in butter with your hands, if you think it's enough butter you will most likely need more.

Grab two large bowls put the butter, sugar and lemon zest into one and the flour, baking powder and salt into another. Using an electric whisk with the butter, sugar and lemon zest until it's all creamed together and turns into a very pale and fluffy. Add one egg at a time and whisk well after each addition. Then use a metal spoon to fold in the flour mixture taking care not to knock out the air you have whisked in.

Dollop the mixture into the very greased bundt tin and smooth the top over and put in the oven for 40-55 minutes.

While the cake is baking you can begin to make the syrup, heat the caster sugar and the juice of 3 lemons in a pan and leave to bubble until it's reduced by half then put into a swallow bowl to cool completely.

When the cake is ready remove from the oven and poke holes all over the surface while the cake is still warm pour the cool syrup into the cake and leave to soak for 15 minutes. After that you should turn the cake into a wire rack to let the cake completely cool.

Now that's it your cake is done! You can decorate it however you wish, I went very simple and used icing sugar to pour over my cake. I hope you enjoyed this and will be trying it out for yourself! Good luck!!
